In the darkness of the cellars, each Vintage undergoes a slow transformation in the bottle, in contact with the lees, to achieve the harmony that is the hallmark of Dom Pérignon. It is there that everything happens, with great precision, on the edge of extraordinary balance. For each Vintage, from its creation, a limited number of bottles are set aside in the cellars, predestined for a longer maturation.
